It's the little things in life that please me. I think after you have watched a love one (or two) fight an illness, sadly breathe their last breath and slip away whilst holding your hand, you realise what is important. That is not meant to sound morbid, but help you understand why just a simple sunrise with the right people can be all you need for a perfect life. Missed buses, stupid arguments and other daily issues we all get stressed or worried over are merely noise in the overall scheme of things. 

Our Granddaughter stayed over as a treat this weekend for her birthday and was a joy just to spend some quality 1-2-1 time with her. She is easily pleased and has good conversation skills now, so watching the sun come up while chatting and drinking hot chocolate is just a perfect start to the day.

Pancakes for breakfast are a given on a sleep over and this time we added an arty twist to them. The Birthday cake pancake I made for her complete with candle and initials was a hit, even though I forgot to mirror her initials. These fluffy american pancakes are so easy to make, (recipe coming soon) and yes she made them. They were really beautifully tasty with some plain yogurt and fresh berries. The flowers, stars and heart pancakes were so delicious it wasn't until we were down to the last one we realised we had not taken a photo of them as they were so pretty and fun to serve up.

She also made some salted caramel fudge in the Thermomix which is so simple to make and delicious to eat, I may rename it Dangerous salted caramel fudge! ha ha.

Easy NO FAIL TMX Dangerous Salted Caramel Fudge

The recipe is for a TM5 - Tin used 20cm by 25cm lined with greaseproof paper.

170gm - Good eating white chocolate (chop 6 seconds speed 9 and set aside)

1 can - Condensed milk (approx 400g)
160gm - Brown sugar
120gm - Salted Butter
75gm - Golden Syrup 
50gm - Glucose
1tsp - Vanilla essence

Put all ingredients (except chocolate) in TMX and cook for 8mins / 100ºc / speed 3 (no MC)
Scrape down the sides and the base of the bowl and cook 19mins / varoma / speed 3 (no MC)
Add chocolate and mix 5sec / speed 4, Scrape sides and mix 5sec / speed 4. Repeat until all chocolate is combined. (use the MC to avoid splashing)
Pour into lined tin, Sprinkle extra salt on top if desired and leave to cool. 
When cooled put in fridge until set. Cut into squares and store in an airtight container in the fridge. 

For a more salty caramel fudge add more salt (1/4 tsp) when adding the butter. 

This weekend wasn't about dieting, or exercise, although we did walk a lot around Winchester market and the Winchester Science Museum and Planetarium, it was our Grand daughters choice and what a fun weekend it was. We loved learning about the planets in the Planetarium also DNA, fingerprints and crime scenes in one of the fun workshops there. The market in Winchester is very diverse with lots of stalls from antiques to peaches!

Back to a Monday morning now and its washing, cleaning and making some more peanut butter, recipe is in a previous blog. (Dyslexic sat nav and Photo bombed by the Queen and Prince Phillip.)
